Cantina di Monteforte Terre dei Cimbri Ripasso
Ripasso means "to pass over again". When a Valpolicella label says Ripasso, it means that after the first fermentation the wine has been transferred to a barrel with residues (the so-called lees) from the production of Recioto or Amarone. These two types of wine are made from dried, sugary grapes, and the marc kick-starts an extra fermentation in the Valpolicella wine, making it richer and more generous, while also absorbing some of the complex aromas of Amarone or Recioto. A full-bodied and aromatic wine with light sweetness well-balanced by juicy fruit and acidity. Soft but well-structured.
