2015 Insolite Saumur Blanc Domaine des Roches Neuves

L'Insolite is Thierry Germain's famous white wine from Saumur. The grapes come from 2 plots, Les Carpes and Saint-Vincent, with vines up to 75-years-old. The terroir (soil) here consists of chalk, clay and some flint. All grapes are harvested manually several times and sorted to use the best grapes at the optimal time. The wine has a yellow straw colour with crystalline reflections and undertones of green and silver, the bouquet is challenging with several layers: first a little chalk and minerality, then hints of fruit like pear, peach and apple and add a little citrus and spice. The flavour is also mineral and full-bodied with a fine underlying acidity, it all finishes with an acidic structure with a touch of salt.
