2014 Savagnin Arbois Jura Domaine du Pelican

Savagnin is the grape for which the Jura region is best known. In Jura, Savagnin is mostly used to produce 'vin jaune', an oxidised wine that has made Jura famous. Domaine du Pélican has chosen to go a different way and has made a non-oxidative cuvée. The term "Ouillé" means "topped up" and refers to the fact that the barrel where the wine is fermented and aged is completely filled with wine, so that the wine is not exposed to contact with oxygen - a significant difference from the traditional Jura Savagnin wines, which are made with contact to oxygen. Without the traditional oxidation, the grape's true aroma profile can be expressed with notes of fresh exotic fruit, spice and hints of toasted hazelnut and white pepper. A medium-bodied and vibrant white wine with high fresh acidity and a refreshing citrus aftertaste.
