    Tillington Single Vineyard

    Nyetimber only produces this wine in very special years, the first vintage was 2009. All Nyetimbers wines are made from their own grapes. The vines are grown on south-facing vineyards with soil conditions very similar to those in Champagne. All grapes are hand-harvested of course. The Tillington vineyard is located in the middle of the South Downs National Park and precisely where the vineyard is located, the soil is composed of sand and chalk stones, which makes the vineyard drain naturally and the wine here has an unmistakable mineral character. The vineyard is planted with both Chardonnay and Pinot Noir and is south facing. The wine has a beautiful light golden colour with silver reflections with very fine, small bubbles. The bouquet has a touch of smoke and crème brûlée, which expands with hints of wild strawberries and cherries after some time in the glass. The flavour is intense and elegant at the same time it has a nice underlying acidity and finishes with a long aftertaste with a little vanilla.

    Nyetimber, the pioneer of English sparkling wines, is taking this category to another level by creating a single vineyard wine. The winemaker, Cherie Spriggs, who joined in 2007, felt that the grapes from the Tillington vineyard were of superior quality and started to vinify them separately. This is the second vintage from only 4-year-old vines. Predominantly Pinot Noir with some Chardonnay, it has spent 4 years on lees and only 4000 bottles were released. The result is pretty impressive for such young vines: fresh grapefruit and lemon scent comes to mind with some creamy notes. Very pure, graceful and focus offering many layers of complexity with a persistent mousse and a long finish. With a price tag of £78; it raises the bar for English sparkling and entering the Champagne Grande Marque territory.
